SPINACH BANANA OATMEAL MUFFINS
Baking healthy muffins on a Saturday morning is one of my favorite weekend rituals. After having smoothies all week, it’s nice to have something warm and freshly baked, without the guilt. I usually choose a recipe based on what we have in the house (this week – barely anything lol). I noticed oats in the pantry and I knew we had bananas and spinach in the freezer so decided to whip this one up in the blender!
2 cups oats
1/4 cup flax seeds
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp pink himalayan sea salt
2 tsp ground cinnamon
1/2 cup almond milk
2 cups spinach
1/4 cup coconut oil
2 bananas
2 eggs
1 tsp vanilla
1 cup blueberries
- Grind the oats and flax in a blender. Mix in bowl with baking powder & soda, sea salt, and ground cinnamon. 
- Blend almond milk, spinach, coconut oil, bananas, eggs and vanilla in blender. Add to dry ingredients. 
- Fold in blueberries. 
- Bake at 375F for 30 minutes.
